Steve's Year-2000 Chili

This recipe was a HUGE hit when it was first introduced!

Ingredients

1-1/2 lbs. Extra lean ground beef

1 bottle (12 oz.) dark, strong beer

1 can (16 oz.) Italian-style diced tomatoes

1 can (16 oz.) Dark red kidney beans

1 jar (16 oz.) Salsa - Medium, chunky

1 can (8 oz.) tomato paste

1 cup onion, chopped (about 1 large onion)

4 Tbsp. Chili powder (more or less)

2 tsp. sugar

1 tsp. ground cumin

1/4 tsp. black pepper (more or less to taste)

Directions

In a large heavy pot (or a large Crock-Pot) combine the tomatoes, beans and tomato paste. Heat thoroughly. Brown the ground beef in a cast-iron skillet. Add the onion and sauté until tender. Pour in the salsa and add to this the Chili powder, sugar, cumin and pepper. Simmer until liquid is mostly gone. I usually add a little beer to the beef mix. It gives me an excuse to get one for myself! Add the meat to the simmering vegetables, and cook slowly. A bottle of beer may be added after 30 minutes. After a few hours (if everyone hasn't "sampled" it to death) serve with crackers, cheese and sour cream. Serve with more beer.

Notes:

Please note that this chili will tarnish stainless utensils, and will destroy Teflon-coated cookware.

This will also permanently stain china dishware, and causes most people to sleep alone for a few days.

Leftovers are guaranteed to be hot & spicy the next day. Kids can't eat this stuff…
