Navy Bean Soup

It's one of my mom's old recipes! |
Ingredients

2 cups dried Navy Beans Smoked pork hocks 4 cups onion, chopped (about 3 medium onions) |
2 carrots, shredded 1/4 tsp. pepper 1-1/2 tsp. salt Other seasonings, to taste. |
Directions

Sort and rinse navy beans. Place in large kettle and cover with four inches of water. Bring to a boil - boil for two minutes. Turn off heat. Cover and allow to soak overnight. In the morning, add beans, onion, pork hock and seasonings to a large Crock-Pot. Add up to 3 quarts of water - everything must be covered! Cook on High until soup boils. Reduce temperature to low, and continue to cook for a minimum of five hours, stirring periodically. Remove and de-bone pork hocks. Add pork meat, carrot and seasonings, return to boil prior to serving. |
