Super Macaroni & Cheese

This ain't no boxed mac & cheese! |
Ingredients

1-1/2 cups uncooked macaroni shells 1/4 cup margarine or butter 1 tsp. minced onion (more if desired - may use real chopped onion instead.) 1/4 cup flour 1-3/4 cups milk |
6 oz shredded Cheddar cheese 3 oz. shredded Swiss cheese 1/2 tsp. salt 1/4 tsp. pepper (more or less to taste) |
Directions

Preheat oven to 375 degrees. Cook macaroni as directed on package. In a small skillet, cook and stir margarine, onion, salt and pepper over medium heat until onion is tender. Slowly blend in flour. Lower heat and continue cooking until mixture is smooth and bubbly. Gradually stir in milk and increase temperature to boil. Boil for one minute, remove from heat and stir in cheese until melted. Pour macaroni into ungreased 1-1/2 quart casserole. Gently stir in cheese sauce until well-coated. Bake at 375 degrees for 30 minutes. |

Everything about this macaroni and cheese is different - it tastes absolutely nothing like the boxed variety. So, if you think you've had one too many helpings of that Kraft stuff, try this - you'll be in for a pleasant surprise! |
